This recipe is very easy and is restaurant-quality good. A crowd pleaser.
Boneless Pork Shoulder (usually they're about 4 lbs)
Can of Coke or Beer
Optional -- rub with Rib Rub or Lawry's Season Salt
Cook on low in Slow Cooker for approx 8 hours
Drain and pull apart discarding any fatty pieces
Mix in your favorite BBQ sauce. I prefer Sweet Baby Ray's.
If you make ahead, you can heat it back up in a baking dish.
Or, put on in the a.m. and it'll be ready by dinnertime.
Super yummy served with coleslaw ... put a little on the pork for Memphis Style sandwiches. I usually buy cabbage mix and Marzetti's or Litehouse Slaw Sauce and then mix 1/2 and 1/2 BBQ and slaw sauce with the cabbage for a little zippier coleslaw. The coleslaw is also super good if you add some chopped peanuts and cilantro for a little different taste.
