I started Weight Watchers (again) a couple weeks ago and to my surprise, they have really improved the program by adding an e-tool. The online tools have a built-in recipe builder which allows you to take your everyday recipes, put them into the builder and it'll tell the point value of each serving. This is great. No need to find new things to make, just may need to "lighten up" some of the recipes (which the tool can also help with). Here's a recipe I wrote and tried. It's very good. It's only 4 points per bowl.
1 cup diced onions
15 oz. can diced tomatoes, do not drain
15 oz. can yellow corn, do not drain
15 oz. can black beans, do not drain
2-3 cups low sodium chicken broth
1 medium jalepeno, chopped with seeds
1/2 rotisserie chicken meat, chopped (I used just the breast meat)
1 tsp ground cumin
salt and pepper to taste
Saute chopped onion and jalepeno in about a 1/4 cup of the chicken broth until soft. Add tomatoes, corn, black beans (with all of their juices) and chunks of chicken. Add salt, pepper and cumin. Cook 30 minutes to let all of the flavors blend. Add chicken broth and serve. Additional chicken broth may be needed if you want the soup to be more brothy.
Yum! Serve with 16 tortilla chips and add an additional 3 points.
